Pancake Durian @ Bantal Durian

Hujung-hujung tahun ni, banyak pulak serangan penyakit....
Boboys dengan papanya dilanda demam panas, Alhamdulilah dua-dua gegirl sihat, kuasa Allah, kalau x, sapa yang nak jaga 'pesakit2' ni dan yang nak bikin keadaan mama lagi haru dan ceria kalau bukan Syarah Ameerah bambam tu...

Ok, back to the recipe story mory......
Sementara ada masa kelapangan, time semua lena dibuai mimpi... ingat nak cari resepi talam durian....
Cari punya cari, surf punya surf, google punya google, terjumpa pasal satu artikel dari Kosmo...
Pada sesiapa yang tak pernah dengar dengan tajuk entry ni, kene baca tau artikel ni, di SINI

Bila baca je, dah terliur da... kebetulan, durian ada lagi, memang kene cuba nih,...cuba jangan tak cuba ye...
So, menggooogle lah lagi akan resepinya... Puas mencari tapi x banyak. Cara membuatnya simple je, but the hardest and trickiest part is to prepare the skin; sangat nipis dan lembut..... That chinese lady had used 7 types of flour...Danggg!
TUJUH ye puan-puan......Hah, Sudah!
Mana nak cekau 7 jenis tepung tu......

No wonderlah, yang telah mencubanya memberikan komen that the skin is so melt in your mouth...
Adusssss! Camner tu yek?

Ok, xpelah, I pon check on all the recipes, then came out with my own version....

Skin:
80g superfine flour
130g water
60ml cream
1 egg yolk
1/2 tsp vanilla essence
a drop of yellow food coloring
a pinch of salt
-mix all the ingredients
-pour on a strainer to get a smooth and fine batter

MESTI gunakan a non stick-pan, my pan size 9" so I need to put 2 tbsp of batter to obtain a very thin and soft layer (I dapat 7 skin layers with the above recipe) and very small fire.
Untuk proses ni, kene banyak sabao ye...

Ok, pan x perlu dipanaskan dahulu dan x perlu letak minyak.
Letakkan batter atas pan, goyang-goyangkan, pusing-pusingkan, gelek-gelekkan (ewaaahhh!) pan anda sehingga semua batter menutup tipis permukaan pan.
Then, put on fire.....

the batter will slowly changing into translucent color

then slowly into opaque color with some bubble in the middle

once, the whole skin totally change into opaque,

angkat pan dan slowly take out the skin. Biarkan pan betul-betul sejuk, kemudian baru ulang proses yang sama sehingga batter habis. Pastikan semua skin sejuk sepenuhnya


Filling:

Isi durian secukupnya

dan non-dairy whipping cream yang sudah dipukul hingga kental


-cara nak assemble, boleh refer pada link yang I letak kat atas tu.
Daaaaan terhasillah ini.... Taddaaaaa!!!!

Letak atas papercup (untuk elakkan melekat @ lapik dengan plastik), kemudian, masukkan dalam bekas bertutup rapat dan simpan dlam peti sejuk 15-30 minit @ seberapa lama yang anda tahan nak tunggu, kemudian.....

Baked Durian

Remember tak my previous post yang I nak try buat durian goreng tu.... Hahahahaaaa
Tapi as I mentioned earlier, I tak nak buat goreng version....takuuuuuttttt...
So, I tukar pada bake version.... hihihihi
Bukannya apa....faham2 je lah ye...durian tu full with kolestrol (opsss!.... takut nak sebut...)
Kalau digoreng, sapa yang nak bertanggungjawab..... lemaaaaak jugak...yang akan dipersalahkan.
Takut jadi mcm ni.....

Jangan ada yang meng'deep' fry dengan evoo udah la ye...

Oklah, kita teruskan pada resepinya ya...

150g durian flesh
40ml cream
phyllo pastry
enough butter, melted
1 egg mix with 1 tsp cream - as 'glue' and for eggwash


First prepare the filling. Put cream in a pot, heat on stove with small fire till it start bubbling at the side

Take the durian flesh

Quickly add into the cream, stir till well mix, turn off fire, let the durian filling cool slightly

Take out the phyllo pastry, carefully separate the layer. I used 2 layer only. Phyllo pastry that I used, make sure choose the right one

Put a layer of phyllo skin on a flat surface, brush with melted butter, then put another layer on it. Using pizza cutter, cut the skin into equal square sizes, I obtained 12 squares. Scoop the durian filling on each square equally. Take one end of the skin and fold on top of the filling. Brush the top with egg

Next, take the opposite end and fold on top of each other and brush with egg

Proceed the folding process with the other two end till become like below picture

Arrange on baking tray, and bake at 190 C for 15 minutes or till cook. Serve while still hot

Milo Dinasour

My 2nd son demam, since last Tuesday, poor Syabil Aqeel, and got few blisters in his mouth causing him difficult to eat and drink....
He just want to drink cold chocolate drink je....
(At the moment I update this blog, he seems recovering from the fever but still got 1-2 blisters in his mouth and his appetite is recovering too but his brother, Syahmi Ameen is undergoing his 2nd day of the same problem).

So, I was thinking to make something that can cheer him up by spice up his 'meal'....

The ingredients.....there is no exact measurement for this recipe because it's all up to your liking ya!

Milo
Dutch Lady Chocolate Milk
ice cubes
mugs @ cups @ glasses

First thing first,put enough ice cubes in a blender ( should fill 3/4 @ or more of the blender mug, for 3 person)

Crush the ice (make sure your blender can do so and guaranteed by the company)

Divide the ice equally into each mug @ glass@ cup, then fill the chocolate milk 3/5 full followed with lotsa scoops of milo! (depends on your liking, how many scoop you want to add)

Then give it just a light stir, I purposely want the milo lumps remain floating on the drinks.
To add more kick, u can add instant coffee powder into it (I used 1/4 tsp instant coffee powder mix with 1/4 tsp hot water, for my mug only!)



Ok, now, here's the trick, the 'dinosaur' trick.... Add scoops of milo powder on top of the drink, fill till full the mug!

Cooking class 2..... with boboys!

Noon peeps!

Time cuti2 sekolah ni, kalau x pi cuti2 malaysia, kenela fikirkan aktiviti kat rumah supaya my boboys x boring, kesian pulak depa, asyik2 main dgn toys je kan, mama plak x boleh nak layan sgt depa....

So i took this opportunity to do activity yang depa like the most... COOKINGGGG! jangan x caya no....

Memandangkan dah berabad2 depa dok bising mintak belikan Playdoh set, yang mana mamanya ni paling x suka lah, bukan apa, tau je lah, bebudak main kat lantai, nanti berminyak, tercalit sana, tercalit sini, pulak tu depa suka campoq, lekat2 kat toys depa.... haishhh! x boleh tahan la...

So, i pon ambik pendekatan yang berbeza, itupon atas saranan my boboys gakla sebab depa suka no watch youtube, happened to be terjumpa cara2 nak buat homemade playdough....
Bagai pucuk di cita ulam mendatang kan lah ye....
Itupon sebelum nak buat mamanya ni dah kasi rules and regulations. If they don't follow, once in a lifetime je la depa bole main benda nih and no other color will be prepared.... So, setelah persetujuan pon dicapai, they decided to choose blue color dulu....

Aktiviti pon bermula.........

Bahan2 yang diperlukan termasuk lil' chefs nya..

1 cup flour (I used cap bunga cempaka, murah!)
1/2 cup fine salt
2 tbsp cream of tartar
1 tbsp oil
3/4 cup water
1 tbsp food coloring - the amount depends on the type of color u use
cooking pan



put all the ingredients in the pan and stir lightly

put on stove with slow fire, stir continuously

till become soft dough

put on a flat surface dusted with flour

knead well

till become smooth dough

cover with cling film to avoid the surface from drying, let cool completely prior to use

Amacam, mudah dan senang je kan?
Bukan itu saja, malah sangat selamat untuk digunakan.
Jangan lupa utk mencubanya bersama2 anak2 anda sebagai aktiviti tambahan mereka di cuti sekolah ini.....

Butter Prawn

This is a repeat recipe actually....
Happened to be, I found this giant freshwater prawn at the fish market at my hometown, Sungai Besar Selangor..
This is my favorite seafood actually....hohohoho
Flipping back my memory book, when I was still small, Abah always catch this prawn every time he finish doing his work at paddy field.
He always get big catches.... The big sizes will be sold at the pekan, and we'll having the medium to small sizes...heavennnnnnn. No wonder la now, my sister and my mum got 'resdung'! hihihi

Ok, let's proceed with the recipe:

2 giant freshwater prawn - u can use any type of prawn, even lobster ya. Cleaned, washed, cut half lengthwise, sprinkle with salt and pan fried half cook on each side

leftover evoo from frying the prawn
1/2 tbsp flour
2 tbsp cream
1/3 - 1/2 cup water
salt to taste
1/4 chicken cube
any herbs - I used rosemary and basil. Love to add this coz it will give extra flavor!

- heat the leftover oil, add flour, let it bubbly
-add cream, mix well, add water, salt, chicken cube, herb
-add prawn
-mix well till sauce reach desired consistency

Cooking class ..... with boboys!

Early this morning my boboys woke up excitedly because last night I have promised them to prepare pancake together, after about 3 weeks they begging me to restock the mix... (x sempat nak beli maaaa....)

Opppsss!!, forgot, we got 3 chefs actually,..... plus the new little bambam chefs, fresh from the 'oven', smell so fresh!




Let's proceed with the pancake making process....


Ok, first thing first,

mix all the ingredients in a bowl




Next, we need to stir it till become a smooth batter,

Pemandangan yang sangat best....tahun ini

Wow!
Sangatlah lama tak update...
Kali ni update2 terus citer seperti tajuk diatas...recipes...? Kita cuti jap ye...
Sebab x sempat nak bergambo gambi lepas masak la ni...siap masak je terus ngap!
Insyaallah kejap je.... hehehehe

Resepi ni menggunakan pak duri flesh as main ingredients.....

Inilah dia, durian goreng....dengor je dah membayangkan ....KOLESTEROL......
Menurut reviewer nya, lapisan kulit luar adalah tepung yang rangup, manakala dalamnya seperti kastad durian yang lemak berkrim gituuuu......
Ingredients semua da ada dalam kepala, tapi tu lah....tengah pikir camne nak menggayakannya, maklumla, x pernah try test cuba lagi.....
Xpe banyak masa lagi nak tunggu buah gugur....

Ek eleh, bukannya x boleh nak pi beli durian yang jual tepi2 jalan tu....
Hahahaha...tu la pasal....nak tunggu buah kat rumah ni jugak......
Excited punya pasal, sanggop ko, sampai terliur, terbayang, termimpi bagai.......
Kalau dah tak tahan gak memang kene beli jugak ni....
Tapi nampak gayanya kene ubah sikit cara masak kot....bake...bole?
Cer try....cer try....

Udah2 le melayankan pak duri tu, meh cuci mata dengan pemandangan2 yang lain....

Dah siap berkupas, bukan apa, malas nak melayan semut2 yang berjuta2 tu....
Kupas, simpan dalam fridge...mudah untuk dimakan bila2 masa je...
Buah ni tak heran pon kan...banyak dimana2...
Kebetulan ada la setangkai dua yang da ranum...time ni la nak merasa... lepas ni, bukannya tak berpeluang, tapi, pandang sebelah mata pon I tak rela youuuu....
Dah, tak payah nak makan banyak2, nanti batuk, sapa yang susah.....

Yang ni pulak, saki bakinya..... ada lagi sesikit sebenarnya, tapi other side, maleh nak turun snap gambo...
Ni pon jadik la ye... sekadar mencuci2 mata....
